We make Memphis Style BBQ: No Hurry, No Shortcuts. BPS BBQ slow smokes all meat on our six rack rotisserie style smoker. It holds up to 500 pounds of meat and we slow smoke our pork for up to 15 hours at 225º. We use Hickory & Cherry firewood, which is a part of what gives our BBQ its distinctive taste – the other part we can’t tell you! While others have gone to convection ovens and hickory saw dust for speed and lower operation cost, BPS BBQ doesn’t spare time or expense and the evidence is the faces of the people we serve!
